Caesar Dressing

Makes 3/4 cup

INGREDIENTS

1/2 cup plant-based mayonnaise (I like Vegenaise) 1 garlic clove (medium), minced 2 tsp lemon juice, to taste 1 tsp dijon mustard 1/2 tsp Worcestershire*

1/8 teaspoon fine salt 1 tablespoon water

1/3 cup finely grated parmesan cheese (if using vegan parm, pulse in processor to 'grate' or chop finely) Freshly ground black pepper, to taste



  • In a bowl, add mayo, minced garlic, lemon juice, dijon, Worcestershire, salt and water. Whisk to combine.

  • At this point you could stop if you’d rather not use parmesan (plant-based or regular) The addition of the cheese does add a nice flavor and texture though.

  • Add parmesan and stir to combine.

  • Serve over greens, use as a dipping sauce, add to a burger… get creative, it’s delicious!

*Traditional Worcestershire (am I saying that correct?!) contains fish sauce so

if you’re looking to go full vegan here, look for a vegan brand such as Annie’s.
